I am thinking about starting a knife sharpening service to operate out of my boat as extra income to me and a service to all.  Currently I am looking for a decent serrated  (bread) knife sharpener as they are most difficult.  Probably all work wilol be done by hand, reasonably priced and quality guarenteed.  My question is: how many sailers out there would be interested in this service?

Depends on the cost. I was a meat cutter for Kroger, and we sharpened knives, scissors, for free. We used a 110v. two disc sharpener and finished with a high quality steel. Would it cost more to sharpen than to replace?
Personally I'd be more interested in hand saw blade sharpening, again though, it would need to be cheaper than replacement.
I would probable want 3 - 4.00 for a knife depending on size and condition. hand saws are waaaaaayyyyy out of my league. that is a specialty machine to sparpen and set the teeth.
Price sounds reasonable enough. Now you just need to talk to as many sailboaters as you can, face to face, to see if there is a demand.
I used to do some buying for an antique dealer and would find old saw setting tools all the time. They where sort of like a special pair of pliers that would bend the teeth of the hand saw blade to put the set back in them. I'll bet you can still get them somewhere. Hey how about wood chisels...all mine need sharpening :).
